Say E komo mai (welcome) to the Aloha Shack Menu! We’re teaming up with Butcher’s Block and in collaboration with Raffles Hotel Singapore. It’s more than just a menu, it’s an experience that discovers the Hawaiian and local favorite’s flavors.
Meet Chef Jordan
Inspired by Chef Jordan Keao’s roots in Hawaii and his journey in Singapore over the past decade, this menu brings together woodfire cooking, Hawaiian flavors and the rich cultural heritage found right in Raffles Hotel Singapore. It’s a celebration of authenticity, history and genuine hospitality.
At its core, the Aloha Shack Menu reflects a shared philosophy between Chef Jordan and Shake Shack: to honour real, whole ingredients, celebrate culture and create food that feels both elevated and approachable.
BBQ Smokehouse Shack
A made-to-order quarter-pound per patty of 100% Angus beef topped with smoky minced beef gravy, BBQ kecap manis, pickled jalapeño and pickled red onions on a toasted potato bun. Available as a single or double.
Huli Huli Chicken
Hand-breaded crispy chicken breast or thigh glazed in Huli Huli sauce, topped with coleslaw and lettuce served on a toasted potato bun.
Salted Egg Fries
Crispy crinkle-cut fries topped with salted egg yolk sauce, garlic butter, white pepper and fried curry leaves
Roselle Ginger Lemonade
Roselle ginger concentrate mixed with our house-made lemonade
Ube Coconut Crème
Ube coconut hand-spun with vanilla frozen custard, topped with mochi coated in Kinako powder.
